Pancake Day should be celebrated like Christmas, Easter, and Halloween, right? It’s one of the greatest food-based celebrations of the year, originally designed to get us using up all the delicious, tempting treats in the house before the period of Lent.

 

And, here at Greenwich Shopping Park, we think the day is worth celebrating. That’s why we’ve complied three of the tastiest and sweetest pancake recipes for you to try out this Pancake Day, courtesy of our on-site store Lidl.

 

Whether you like going over the top with your toppings or enjoy the classics — our pancake recipes will have your tastebuds tingling and your house filled with the delicious scent of sweet pancakes.

 

 

Lemon and sugar

 

 

 

We thought we’d start off with a simple but classic recipe – lemon and sugar. This super easy, super quick recipe will only take you around 30 minutes to prep and cook. In order to create these easy, but tasty crepes all you’ll need is:

 

  • 100g plain flour
  • 2 large eggs
  • 300ml milk
  • 1 tbsp sunflower or vegetable oil + a little extra for frying.

For the topping, you’ll simply need some lemon wedges and caster sugar – easy peasy lemon squeezy!

 

Start by putting all your ingredients into a large bowl or jug and start to whisk until you create a smooth batter. Set aside for 30 minutes to rest (if you have time!) or it’s fine to start cooking straight away.

 

After you’ve left them for a while, set a medium frying pan or crepe pan over a medium heat and carefully wipe it with some oiled kitchen paper. When hot, cook your pancakes for 1 minute on each side – or until golden. Lastly, serve with lemon wedges and caster sugar, and enjoy!

 

 

Vegan pancakes

 

 

 

Courtesy of Tasty, these fluffy pancakes will have your non-vegan friends questioning whether they should turn to the green side…

 

Although there are a few more ingredients for this one, we can guarantee you’ll be making these every weekend for your Sunday morning brunch after just one taste.

 

You’ll need:

  • 1 cup of flour
  • 2 tbsp organic sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup of non-dairy milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla

And for the topping, you’ll need maple syrup or melt your favorite vegan chocolate over berries!

 

In a medium bowl, add the flour, sugar, baking powder, salt, and stir to combine. In a separate bowl,  add the non-dairy milk, apple cider vinegar and vanilla and stir to combine. Then combine both the dry and wet mixtures together and blend well until smooth.

 

Leave the batter to rest for 5 minutes, before pouring ½ a cup of batter onto a non-stick pan over a medium heat. When the top begins to bubble, flip the pancake and cook until golden.

 

Then plate up, add your favorite vegan toppings, and serve warm with a dollop of maple syrup and enjoy!

 

 

Ready-made – American fluffy pancakes.

 

 

 

Now we appreciate not everyone has the time to bake pancakes from scratch — that’s why Lidl’s American style pancakes ready mix is the perfect substitute for an easy, mess free Pancake Day!

 

All you’ll need is the ready to made mix, and your choice of toppings. We recommend 3tbsp of honey, or syrup of your choice, a handful of blueberries and 1tbsp of butter.

 

For the method? Even easier! Pop a little butter into a pan and turn the hob heat up to medium. Once the butter has melted you can pour one of your pancakes into the pan. Cook for one minute each side and set aside, then repeat with the remaining pancakes.

 

To assemble, layer up your pancakes then top with a good handful of blueberries and a drizzle of your chosen syrup. Perfect for a Pancake Day breakfast or after dinner treat!
